The sun puts us all in a good mood, the heat calms our appetite, say the scientists. The same specialists recommend feasting on fruits and vegetables, our best and exceedingly beautiful allies in this venture. Their irresistible colours turn any dish into an incredibly joyful experience.
Bye-bye sad diets, hello organic, healthy, eye-pleasing and eco-friendly cuisine.
Au revoir alcohol, sodas, bad fats and processed food. Welcome ice-cold soups, granitas, smoothies and vegetable carpaccio for starters, followed by sumptuous mixed salads, grandiose grilled veggies or vibrant veggie casseroles and a small portion of rice, quinoa, couscous, bulgur, lentils, beans or chickpeas. Sublime sorbets, granitas, fruit soups or iced fruit will do nicely for pudding. Sweets, so totally passé, are replaced by scrumptious frozen cherries, marvellous melon or watermelon balls, to be sucked like succulent sweeties.
Test these simply sublime recipes. Try and use organic fruits and vegetables.
Cold cucumber and watermelon soup
Put 300 g seeded and cubed watermelon with 1 peeled and sliced cucumber in your beautiful blender. Add the juice and grated zest of 1 lime and a pinch of Cayenne pepper. Blend furiously and refrigerate for 2 hours minimum. Decorate with mint leaves.
Mixed salad with beetroot hummus
For the mixed salad: you need 250 g lovely young spinach leaves, 2 cute carrots, shaved into ribbons with a vegetable peeler, 1 delightful courgette, 4 lovely green asparagus, 2 ravishing red radishes, all given the same treatment. Chop 3 small sensational spring onions (bulb and leaves) and 8 beautiful baby tomatoes cut in half.
For the hummus: In your magic mixer put 2 superb cubed beetroot, 420 g cooked chickpeas, 60 ml water, the juice and zest of 1 lime, 1 teaspoon cumin, 1 tablespoon tahini, ½ teaspoon salt. Mix furiously. Place 4 pieces of toast on 4 pretty plates. Top each with ¼ of the hummus and decorate with sesame seeds or whatever takes your fancy. Artistically arrange ¼ of the salad ingredients on each plate with lime quarters. Take the time to admire marvels before happily feasting on them.
